Ube Leche Flan Recipe

Ingredients
- 10 Egg yolks from medium-large eggs
- 305 ml Condensed Milk
- 236 ml Full Milk
- 128 grams granulated sugar
- 1 teaspoon vanilla extract
- 2 drops Ubeness (Purple Yam Flavoring)
Instructions
Caramelized Sugar
- Divide the sugar into 3 or 4 llanera. Heat above a stove until caramelized while spreading it evenly. Then let them cool for around 5-10 minutes. Set aside.
Mixture
- In a large bowl, mix the egg yolks and condensed milk well.
- Then add the milk and vanilla and Ubeness extract. Continue mixing well.
- When the llaneras have cooled. Pour in the mixture evenly.
- Steam for around 30-40 minutes.
- To check if it is ready, prick with a toothpick to see if the flan is stiff enough.
- Cool the flan before serving.
